Tatsumi Menten has incorporated its original noodle production methods into the traditional method of hand-stretching noodles that came from Anjo in the former Mikawa Province. Tatsumi Menten’s noodles undergo a process of being kneaded with high-grade wheat and stretched multiple times. They are cut before being delivered to customers, but these noodles are actually 80 meters long and four millimeters wide. The hand-making process results in this length and width, which allows a harmony of contrasting textures featuring both smoothness and resilience (or “bite”). This combination of two textures – which cannot be accomplished when making noodles by machine – is the source of Tatsumi Menten’s unique flavor, depth, and texture. (These noodles contain no additives. The only ingredients are wheat, water, salt, and vegetable oil [which is used in small amounts, not during the kneading process, but to prevent the noodles from sticking together when they are being allowed to mature]. Production method

Our craftsmen have inherited a 200-year-old traditional production method from Anjo Izumi

An impressive flavor that can only be experienced with genuine handmade noodles.

Our handmade noodles are made with great care using only the finest, carefully selected ingredients, as well as the climate and nature of Anjo Izumi. Great importance is placed on naturally maturing and drying these noodles in the sun in an environment blessed by nature and surrounded by greenery. These high-grade handmade noodles are smooth, soft, and don’t fall apart during cooking. They also have a resilience (or “bite”) as well as a unique depth and flavor.

There are only around 10 noodle producers in Izumi-cho, Anjo-shi. There, Tatsumi Menten has incorporated new, original technologies into a traditional process, and continues to work towards producing even more delicious handmade noodles.

The work of producing noodles begins before daybreak. The only ingredients are wheat, salt, and water. The firmness of the noodles is adjusted and the amount of salt is changed according to that day’s atmospheric temperature and humidity. Because the noodles contain only these simple ingredients, great care is also taken to create water with a mild taste in our custom-made filtration equipment.

After they have been sufficiently kneaded, the noodles are allowed to mature for around one hour before being stretched. This process is repeated for seven hours. Once the noodles have been stretched to a length of 200 meters, they are possessed of Tatsumi Menten’s characteristic stickiness and elasticity.

Afterwards, the noodles are dried in the sun for around one hour. During this time they are carefully moved according to the direction of wind and sunlight.

More labor is required from this point for the method to produce Izumi somen noodles. The dried noodles are exposed to humidity in order to return them to a half-dried state, a method that was developed by Tatsumi Menten. Combining traditional manufacturing techniques from Izumi with Tatsumi Menten’s unique methods results in noodles that are soft, and also have a resilience (“bite”) and smoothness.

Thorough quality management, and production only during seasons when delicious noodles can be made

We only produce our noodles during the seasons of the year in which the most delicious noodles can be made. Our craftsmen are well versed in the unique characteristics of our raw materials and noodles, so they control the quality of each individual noodle by changing the amount of raw materials according to the atmospheric temperature and humidity of a given day.

Tatsumi Menten’s noodles contain no additives and are made from the finest, carefully selected wheat, water, and salt. The water has been subjected to multilayer filtration based on repeated research by craftsmen. Furthermore, we use no alcohol, vinegar-based preservatives, or starch to improve texture, so you can fully enjoy the delicious flavor of the ingredients.
