Fructo-oligosaccharides (FOS) are a source of dietary fiber. They form a mixture of 1-kestose, nystose an 1F-Fructifuransyl nystose, which are consisted of 1 to 3 fructose through β(2-1) glucosidic bond.

The sweetness of FOS is half of that of sucrose. FOS is a new healthy functional sweetener, which can regulate intestinal microflora, increase the amount of bifidobacteria, promote the absorption of calcium, regulate blood lipids, modulate immunity, protect against dental and so on.
